Y'all had opinions yesterday... and I LOVED THEM!!! Regardless of which dress Anna Grace picks, one thing is certain - she's going to ROCK it!!! I'll be sure to update y'all on which one won (and I'll post pics of her pre-Prom!), but in case you missed it - Anna Grace was shopping for Prom dresses and narrowed it down to these four choices...
I tallied last night - and apparently we're all soul sisters because y'all were inside my head. Dress two was my favorite (because PINK!!! HUGE!!! POLKA DOTS!!!) followed closely by the dark blue because that is TOTALLY her color!
I'm not sure the winner will be the "Barbie Goes to Prom" dress, simply because she's concerned about the volume and when I asked her, "How much volume are we talking about?" I got these pictures as a response ;)
Today I'm going to share a couple REALLY yummy recipes that make quick and easy dinners. Working all day, I have to be super organized about meals during the week and these are a couple easy ones that you'll find on the rotation at my house.
First up is Zuppa Toscana...
This one is super easy and CRAZY delicious!
It's just 2 cans (about 3.5 cups) of chicken broth and 1 cup of milk (you could totally use 4.5 cups of broth, but I didn't want to open up another can, so I just used milk to make up the difference).
I sliced 3 potatoes thin and then quartered them and added those, one pound of browned sausage and one pint of heavy cream (yeah, I know) to the crock pot. I added in a BUNCH of chopped kale, closed the lid and cooked it on high for about 4 hours (until the kale was cooked down).
I made this pot on Saturday and never took a picture of the finished product. Then I made another pot on Monday and brought it over to a friend.... and forgot to take a picture again. Oh well, I'll let her rave review speak for itself. I promise - so so so tasty!
Next up is a fan favorite in our house - Taco Crescent Pie.
It's 1 lb of lean ground beef, 1 cup of sour cream (I used reduced fat), 1/2 cup salsa, about 1 cup of crushed tortilla chips, a package of crescent rolls, 1 cup of cheddar cheese and 1 tbsp of taco seasoning.
First brown the meat, then add in the 1/2 cup salsa and 1 tbsp salsa. I like to use salsa that has black beans and corn in it.
While the meat mixture is warming through, crush up about 1 cup of tortilla chips and cover the bottom of the pie plate with the crescent rolls.
Pour the meat mixture into the pie plate and then top it with the crushed tortilla chips.
Drop the 1 cup of sour cream onto the chips by dollops and then gently spread it around.
Top it with about 1 cup of shredded cheddar...
... and bake at 375 for about 20-25 minutes or until the cheese is bubbly and the crescent rolls are golden brown.
This is where my crazy iPhone food photography skills come into play (except not at all. hahaha). It probably would have been better if this had been prepared before it was dark, but oh well! :)
This is seriously one of my favorite meals. With a big scoop of guacamole it is absolute perfection.
And just for fun, I took this pic of GG last night trying on one of the bathing suits I ordered for her on Zulily a few weeks ago. It's actually a one-piece with a blouson style top and I'm obsessed. I would totally wear it :) Apparently G thought she was looking pretty good in it as well.
Unfortunately, her suit is sold out from Zulily and I couldn't track it down online, but I did find some other GREAT options. I always like to order swimsuits early before they get picked over (and while they're on sale!)
This floral peplum suit is so so so sweet and y'all know I am a sucker for polka dots.
This floral halter would be covered in chocolate ice cream the first time she wore it, but would still be totally worth it and the pattern mixing on this suit makes me want it in my size.
And this top and bottom set is super cute and offers great sun protection (and would make swim diaper changing a snap - because we all know how fun that is!) hahaha

Those recipes look delicious and there is absolutely nothing cuter than a baby in a swimsuit! G rocked that black and white suit. She needs all of these options in her closet. :)

Ummm I'm pretty sure I just drooled over the Taco Pie! YUM! Can't wait to try! And GG is adorable as always, we ordered our swimsuit from Zulily too! You have inspired me to put a low hanging mirror in my girl's room. Every gal needs to see herself dressed up right?!

ReplyDeleteThat taco pie reminds me of one of my favorite easy meals! We do taco rings. I take a can of crescent rolls and roll them out with the wide parts touching and it forms a circle. Add cooked, drained ground beef with taco seasoning, corn, beans, cheese. Fold all the tails of the crescent rolls over to close up the ring. Bake until crescent rolls are brown! Easy and delicious!

I am just wondering if you have an exercise routine? You are so slim, but it seems like you are able to indulge from time to time. I love making yummy recipes but then find that I gain weight really easily (not fair because my hubby doesn't! lol) Anyway just curious. Happy (almost) Friday! :)
Hey! So your "slim" comment totally made my day :) hahaha I'm a big believe in everything in moderation... I LOOOOOOOVE carrot cake... so I'll have a small piece. I make chocolate chip cookies for the kids... and I have one (not three. hahaha). If I make a heavier soup, I'll have a small bowl and put it with a salad. Leaving for work at 7 a.m. and not getting home until after 4:30 (and having a hubby who works evening hours often) and then having grading, prep, etc. to do - I don't have tons of time for exercise... but I could probably do more :) I try to stay active with my kids and will occasionally do a DVD, but nothing consistent. Dave has a CRAZY metabolism too - not fair!!!

Moderation is definitely something I need to work on...sigh. I fall into the trap of, "Well, I just had 2 cookies, so what's one more?" LOL which I know is not productive. One of the things that is helping me is that when I bake, I'll give away all but a small amount to neighbors, family, etc. That way I'm less likely to eat the whole thing! Anyway, thanks again for responding! I love reading your blog! :)
We LOVE the recipe you shared awhile ago for the pasta with alfredo/marinara sauce and mozzarella so I figured I'll try these other two recipes too! What do you typically serve with the zuppa toscana? Do you serve it over pasta? Have bread and/or salad on the side? Just eat it like a soup? Just curious!
