SCARY Easy Chocolate Cupcakes :)

Happy Halloween, friends!!!  Just in case you weren't already knee deep in sweet treats I thought I'd share our favorite (EASY!) chocolate cupcake recipe.  This would be an easy fix if you need something to take to a party tonight and would be perfect to bookmark for #allthethings we have coming up heading into holiday season.




Here's what you'll need for the cupcakes...
- 1 box of chocolate cake mix
- 3 eggs
- 1/2 cup butter (melted)
- 1 cup water
- baking cup liners


Here's what you'll do...
Combine the cake mix, melted butter, eggs and water.  Mix them together for a minute, scrape down the sides of the bowl and then beat it on high for 2-3 minus.  It will thicken up and become WAY thicker than normal cake batter.  Scoop it into cupcake liners (I use a 1/4 cup measuring cup) and bake them at 350 degrees for 20 minutes.  Done.





These pictures are AWFUL because I ended up making the icing after it was getting dark - but I'm running with it!

For the Chocolate Buttercream Frosting you'll need...
- 3/4 cup cocoa powder
- 4 cups powdered sugar
- 1 cup softened butter
- 2 teaspoons vanilla
- a few splashes of milk


Here's what you'll do...
Combine the powdered sugar and cocoa powder until well mixed.  Add in the softened butter and vanilla and combine it a bit.  Pour in a few splashes of milk and beat until it's fluffy and perfect.  (Icing can seem scary - but don't be intimidated!  Just keep adding milk until it's the consistency you like.  If you add too much then just pour in a bit more powdered sugar).  I use a gallon ziplock bag with the corner cut off to pipe the frosting onto the cupcakes and then I'm done!

They were perfection plain, but then we tossed on some Halloween sprinkles and sent them over the top :)

These don't taste like cupcakes made from a mix and will have everyone asking you for your recipe.  I typically get about 18 cupcakes in a batch, but I also tend to be a generous batter scooper.  These would be delicious with a raspberry or two popped on top and/or a little chocolate drizzle.  You could top them with crushed oreos (yes ma'am!) or even put a little chocolate chip cookie stuck in the icing.  Oh... and my boys got a big giggle out of them looking like a poop emoji and I have a feeling a couple of well-placed googly eyes could go along with with the elementary school-aged crowd :)

We're excited about Trick-or-Treating tonight and are STILL crossing our fingers that the storms hold off for a few hours but I'm also trying to figure out our Plan B in case it's pouring and in the 40's as predicted.

Here's hoping that y'all have some SWEET plans that hopefully involve these cupcakes ;)
