What's Up Wednesday

I actually remembered to put this week's link-up in my calendar and am so excited to link up with Shay, Sheaffer and Mel!

What We're Eating This Week

Enchiladas!  

Saturday afternoon I prepped a couple of pans of these enchiladas.


I put one in the fridge and baked it Sunday night and the other pan I wrapped in foil and saran wrap and then froze.  In a couple of weeks I'll pull it out one night, leave it in the fridge that night and the next day and pop it in the oven when I get home from school for a hot dinner.  Easy!

I also like to freeze chicken spaghetti and spaghetti sauce.  They're easy to double (or triple!) and freeze really well.



What I'm Reminiscing About

Homecoming!  MCA HoCo is coming up and it always gets me reminiscing about when Dave and I started dating (Homecoming 1999).  The picture below is actually from 2000, but you get the idea :)


It also makes me reminisce about past Spirit days.  Here are a few from last year :)  And yes... that's a pizza onesie.


And of course I have to reminisce about teeny tiny Luke at Homecoming.  And let's talk about how these girls are married, entering grad school, and off to start careers!



What I'm Loving

The cooler weather.  Y'all.  It's been amazing.  AH-MAZ-ING!!!  I wore a SCARF and didn't feel like I was going to pass out.  #blessed ;)



What We've Been Up To

Spending lots of time outside!  It was sooooo hot and humid here the last few weeks that with the nicer temps we've been outside A LOT trying to soak it all in.

Mason's been bike riding (yes, in a lion costume)...


... and apparently Luke thought it was cool enough to wear an actual coat.  I mean... the kid's half Canadian, suck it up and take off the coat :) 


And GG has been spending lots of time pushing her baby around while wearing the cutest clogs ever (more on those later!  But I can tell you that they're the only shoes she wants to wear. hahaha)



What I'm Dreading

Grading projects!!!  I did a couple of fun projects with my Pre-Algebra and Math 7 classes this past week, but now I have to grade them! UGH!!!  #teacherlife


What I'm Working On

Halloween Decor!  I've gone to get the boxes out at least 3 times, but just haven't had the time to do it all yet.  I've been cutting out bats like crazy, so it's gong to be fun!

What I'm Excited About

This Friday we have a day off of school and Dave is taking the morning/afternoon to hang out with us!  I'm not really sure what we're going to do... we're thinking zoo, but it will depend on weather so we'll see.

What I'm Watching/Reading

I talked about what I'm watching in THIS POST from Monday, but I also watched this and couldn't wipe the big grin off my face...


I mean... can you even imagine?!?! So fun!

What I'm Doing This Weekend

The regular... soccer, dance, church and then prepping for Homecoming next week.  Should be a fun one!


What I'm Looking Forward To Next Month

Stephen and Cynthia's Wedding!!!  Dave's youngest brother is getting married and we're so excited!  We can't wait to celebrate them and I can't wait to see the boys in tuxes!!!



What Else is New

Not a whole lot ;)  Which is awesome. 


What's My Favorite Fall Recipe

Oh gosh.  I LOVE Fall recipes and have a TON of favorites.  I REALLY love these apple spice cupcakes, this pumpkin sheet cake and these mini pumpkin cream pies.

  5. I almost got that exact MJ top last month, but opted for the Livery Millie top. (Which I love as well) & that Hillary Scott song is so good! It ministers to me still after everything my family went through. Great post!

  18. Care to share some of your fun math projects? I'm with you -- I love assigning them and watching the kids work on them. . .but the grading part stinks. I'm looking for something different to kick off the new quarter (in just two weeks -- this year is already flying by!).
    I read all of your posts from the week in one sitting -- wanted to thank you for taking the time to share your recipes recently -- we made the oatmeal pumpkin cookies the weekend I read about them and they were great! Can't wait to try the mac 'n cheese now :) Have a great weekend.
