I made this chicken bacon gnocchi recipe a couple of weeks ago and while it took a minute to make it was super easy and SO GOOD! Just don't count on it being done in 30 minutes ;)
What You'll Need
- 12-16 oz bacon, chopped
- 1.5 - 2 lbs chicken
- seasonings of your choice
- cornstarch
- 1/2 onion
- 1 package gnocchi
- 1 cup cream
- 3/4 cup chicken broth
- 1 cup parmesan
- few handfuls of spinach
What You'll Do
1) Chop your bacon and add it to a pan on medium/low. Once it's about halfway cooked throw in 1/2 a chopped onion and cook until crispy/done.
2) While the bacon is cooking, chop your chicken, season with some ranch seasoning and whatever seasoning you like (I used "slap yo mama") and then toss it all in a bit of cornstarch.
2) Remove the bacon/onion from the pan and add in the chicken. Cook on each side until cooked through and golden brown.
3) Remove the chicken and put the gnocchi in the same pan. Toss to coat and kind of toast them for about 5 minutes. Then add in about 3/4 cups chicken broth and about a cup of cream and season a bit more. I let mine simmer for a few more mins until the gnocchi was done.
4) Add in your parmesan and a few handfuls of spinach and cook until that wilts down and everything is creamy. Add back in the bacon and chicken and serve with more parm on top.
This was SO GOOD and hearty and would be perfect as the weather cools off.
