I first shared this recipe back in June and with grilling season upon us felt like it was worth the reshare because OH MY WORD it is so good!!! The leftovers are equally tasty and you may want to drink the sauce!
What You'll Need...
2 - 3 lbs chicken breasts (cut into 1” bites)
1 tablespoon olive oil
2 lbs chicken breasts (cut into 1" bites)
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
Sauce:
1 1/4 cups mayo
2/3 cup sweet Thai chili sauce
2 teaspoons sriracha
2 tablespoons honey
What You'll Do...
1. Soak skewers in water for 30 min.
2. In a large bowl, add chicken, olive oil, and seasonings.Toss to coat.
3. Thread 5-6 pieces on each skewer.
4. In a small bowl, combine sauce ingredients.
5. Use half of the sauce to brush over chicken, reserve the other half for basting and dipping once it's cooked.
6. Put the chicken on the grill and once they reach internal temp of 165 degrees, they are done!
7. Brush more sauce on top and serve over rice or with another side.

Every single member of my family loves this. It comes together quickly and the leftovers (if you have any) heat up great. The amount of sauce is a little bit crazy - I did 5 lbs of chicken and it was plenty of sauce, so just know if you follow the recipe and use 2 lbs of chicken you will be swimming in sauce (which isn't a bad thing!).
