I made these cuties last weekend and they were delicious and were aesthetically PERFECT! If you need to bring a treat that looks professional and tastes great these were EASY!
What You'll Need....
- 1 1/4 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened to room temperature
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar, plus more for rolling
- 1 large egg, room temperature
- 3/4 cup peanut butter
- 1 teaspoon vanilla extract
- unwrapped heart candies (I used Hershey's hearts)
What You'll Do...
1) Whisk the flour, baking soda, and salt together. Set aside.
2) In your stand mixer with the paddle attachlemt (or a large bowl with a hand mixer), beat the butter for 1 minutes on high until creamy. Switch to medium-high and beat in the brown sugar and 1/4 cup granulated sugar until completely creamed and smooth. Add the egg and beat until combined, about 1 minutes. Scrape down the bowl as needed. Add the peanut butter and vanilla extract and beat until combined.
3) Add the flour mixture to the wet ingredients and beat on low speed until combined. Dough will be creamy and soft. Cover and refrigerate for at least one hour.
4) Preheat the oven to 350. Line your baking sheets with parchment paper.
5) Scoop and roll the cookie dough (about 1 large tablespoon) of dough each. Rolle each ball in granulated sugar. Arrange cookie dough balls on the baking sheet. Bake for 11-13 minutes or until the tops begin to slightly crack.
While the cookies are baking make sure you have room in your freezer for your baking sheet!!!
6) Remove cookies from the oven and allow them to cool on the baking sheets for 5 minutes.
7) Gently press a chocolate heart candy into the center of each, then transfer the cookies to a large plate and place them in the freezer for about 10 minutes to quickly set the chocolate in the cookie.
8) Remove from the freezer and serve.
