What You'll Need...
Chicken Meatballs (either store bought or homemade)
2 cloves garlic, finely minced
2.5 cups low sodium chicken broth
1.5 cups dry orzo pasta
⅔ cup cream
¼ cup shredded Parmesan cheese
½ teaspoon salt
¼ teaspoon pepper
Chicken meatballs
What You'll Do...
Add some olive oil to a pan, heat the meatballs in the oil - about 8 minutes. Cover and keep warm. (I cooked mine in the air fryer and then added them in later)
Add the garlic to the skillet and cook for about a minute.
Add the broth and scrape the bottom of the pan with a wooden spoon to deglaze. Bring the broth to a low boil.
Add the orzo, cream, parmesan, salt, and pepper, and stir. Place the meatballs back on top, cover and simmer for about 10 minutes until the orzo is al dente. It may look liquidy - but it will thicken!
Taste, season, and serve.
