As we're about to dive into the school year I thought it would be the perfect time to re-share my go-to cupcakes recipe. They're obviously great for birthdays - but are perfect for class parties, that dessert you have to bring or just to make on a random Tuesday ;)
They're super simple but look impressive and I've even made them for friends parties and showers because they taste SO GOOD!
Here's What You'll Need for the Cupcakes
- 1 box vanilla cake mix
- 3 eggs
- 1/2 cup melted butter
- 1 cup water
Here's What You'll Do
1) Mix the cake mix, melted butter, eggs and water together on slow speed for 1 minutes. Beat for an additional couple of minutes on high until the batter is thick, but fluffy at the same time. It won't be runny and such like a regular cake mix.
2) Scoop the batter into lined cupcake tins (I use a 1/4 cup measuring cup)
3) Bake at 350 for 20 minutes
Here's What You'll Need for the Frosting
- 1 cup butter
- 1 cup vegetable shortening
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 1/3 cup heavy whipping cream
Here's What You'll Do
1) Beat together the butter and shortening
2) Scrape down the sides and mix in the teaspoon of vanilla
3) Beat in the powdered sugar (I do 2 cups at a time)
4) Pour in the whipping cream and then beat it all together again until it's fluffy and amazing
So here's where it's about to get janky... I pipe my icing onto the cupcakes using a gallon ziplock bag. #classy :) I put the bag into a big measuring cup to make it easier to fill. Then I cut off the corner of the bag and pipe the frosting onto the cupcakes. The end.
I get TONS of compliments on these and I don't think you'd ever know that they come from a box mix (kind of).
