One thing about me - if the temperatures drop below 70 degrees I'm going to be baking something pumpkin or apple spice. This weekend I made a double batch of pumpkin chocolate chip muffins and they were EVERYTHING. So flavorful, perfect amount of pumpkin and EASY!!
Here's What You'll Need (for a12 muffins)
- 1 cup pumpkin puree
- 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1/4 cup buttermilk
- 1/2 teaspoon vanilla extract
- 1 1/2 cup all-purpose flour
- 1 teaspoon pumpkin pie spice
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup mini chocolate chips
What You'll Do...
1) Preheat the oven to 350 degrees. Put 12 cupcake liners into a muffin pan.
2) Whisk together the pumpkin, brown sugar, granulated sugar, oil, eggs, buttermilk and vanilla until combined. Add the flour, pumpkin pie spice, baking powder, baking soda, and salt. Once well-combined, fold in 3/4 cup mini chocolate chips.
3) Divide the batter evenly into the 12 lined muffin cups. Top with the remaining 1/4 cup of mini chocolate chips.
4) Bake for about 20 minutes or until the tops are golden brown and a toothpick is inserted into the muffin and comes out clean.
I made 24 of these on Saturday and I'm proud/embarassed to say that there are about 2 left in my house. hahaha. They were quick, easy and SO SO SO GOOD!!!

I am not a pumpkin pie person, but give me a pumpkin muffin or bread and I am good! Add chocolate chips and it is even better! These look delicious and I can't wait to make them!!
