Strawberry Pretzel Dessert

I mentioned this recipe in my day in the life post and I don't have any clue why it's so good or why everyone in my family has been asking for it on repeat ;) It's weird BUT SO YUMMY!!!



For the Crust: 
- 2 1/2 cups pretzels, crushed
- 3 tablespoons white sugar
- 3/4 cup butter, melted
- 2 teaspoons vanilla extract

For the Filling:
- 8 oz package cream cheese, softened
- 3/4 cup white sugar
- 8 oz container cool whip, thawed

For the Strawberry Topping
- 6 oz strawberry flavor Jell-O (or two 3-oz packages)
- 2 cups boiling water
- 20 oz frozen sliced strawberries


Step One - Make the Crust
In a large bowl, stir together the crushed pretzels, sugar, melted butter and vanilla extract until well combined.  Press into the bottom of a 9x13 pan and chill until completely cool (okay... lots of recipes say to bake this.... which I think would be fine... the magazine I got this from didn't say anything about baking so I didn't and it was fine)

Step Two - Make the filling
Mix the cream cheese and sugar with a mixer on medium speed until fluffy.  Gently fold in the cool whip until everything is combined.

Spread the mixture over cooled pretzel crust, spreading to the very edges of the dish.  Refrigerate for at least an hour.

Step 3 - Make the Topping
In a big mixing bowl combine the Jell-O and boiling water until the powder is dissolved.  Allow the mixture to sit until it reaches room temperature.

Stir the frozen strawberries into the room temperature Jell-O and pour and spread over the cream cheese layer and refrigerate for at least two hours.









So easy, truly no bake and DELISH!!!  If you make this let me know what your family thinks!
