As we kick off red, white and blue season today I wanted to reshare one of my summer staples.
They're FULL of fresh berries and as long as you have 3 cups ANY berries will do. Suit them to your own tastes and voila! Easy breakfast or snack ;)
What You'll Need...
2-1/2 cups all-purpose flour, divided2-1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup plus 6 teaspoons sugar
1 cup whole milk
2 large eggs, lightly beaten
1/2 cup melted butter
2 teaspoons vanilla extract
1.5 cups fresh strawberries, capped and chopped
1.5 cups fresh blueberries, stemmed
What You'll Do...
Step 1 - Center an oven rack and preheat oven to 400 degrees.
Step 2 - Combine all but about 2 tablespoons of flour with the baking powder, salt and 1/2 cup sugar.
Step 3 - In another bowl combine milk, eggs, butter and vanilla.
Step 4 - Gently stir the wet ingredients into the dry just until mixed. Sprinkle the remaining flour over berries and toss to coat. Fold berries into batter.
Step 5 - Spoon batter into 12 paper-lined muffin cups. Sprinkle 1/2 teaspoon of the remaining sugar over the top of each muffin.
Step 6 - Bake for 22 to 25 minutes or until muffins are light golden brown. Muffins will not test done with a wooden pick because of the fresh berries.
