Honey garlic pork loin

 This is very out of character for me, but I'm going to share a recipe with y'all today without a single photo of the finished product. Why?  Because I made it last weekend and didn't take any pics of the completed meal, my family LOVED IT and so I don't want to wait until I make it again to share it with y'all because it was THAT GOOD!

It's a honey garlic pork loin that was tender, flavorful, easy and my entire family ate it up.  I served it with mashed potatoes and it was a HUGE hit!  It's a super simple weeknight meal and I know lots of y'all meal plan on the weekends so make sure you add this to your list for next week!

What you'll need for the pork loin...
- 3 lb pork loin (I used 3 1lb loins)
- 1 tablespoon olive oil

What you'll need for the spice rub...
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- salt and pepper

What you'll need for the glaze...
- 4 cloves minced garlic
- 1/4 cup honey
- 3 tablespoons soy ssauce
- 1 teaspoon dijon mustard
- 1 teaspoon olive oil

What You'll Do...

1) Preheat the oven to 375 degrees.  Lined a baking sheet with foil and set aside.  Pat the pork loin dry with paper towels.

2) Combine the paprkia, garlic powder, onion powder, thyme, salt and pepper in a small bowl.

3) Lightly spray the pork loin with cooking spray.

4) Take the spice mix and rub it all over the pork loin,  Heat olive oil over medum heat and sear the pork loin until browned on all sides.  Transfer pork loin to the prepared baking sheet.

5) In a bowl, combine the garlic, honey, soy sauce, mustard and oil; whisk until well combined.  Brush the honey mixture over the pork loin and roast for 25 minutes.

6) Tent a piece over the pork so the top doesn't burn.  But back int he oven and continue to cook for 15-20 more minutes, or until the internal temperature of the pork reaches 145 degrees Farenheit.

7) Remove from the oven, loosely cover with foil and let it rest 10 minutes.  Cut the pork and serve.

  1. Could you just put the pan you used to sear the pork in the oven, rather than dirty a baking sheet? I hate doing dishes!! LOL
