St. Patrick's Day Chocolate Chip Cupcakes

Happy Wednesday, friends!  Today I'm sharing a super quick and easy cupcake that was a big hit at my house.  They really don't taste like pistachio and the subtle green color is just enough to make them festive. 




What You'll Need...
- 1 3/4 cups flour
- 1 (3.5 oz) package instant pistachio pudding mix
- 2/3 cup sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup mini chocolate chips
- 2 eggs, beaten
- 1 1/2 cups milk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 6 oz cream cheese
- 3/4 cup unsalted butter
- 4 cups powdered sugar
- vanilla extract

What You'll Do...

1) In a large bowl, combine the flour, pudding mix, sugar, baking powder and salt.  Add in the chocolate chips and stir to combine.

2) In another bowl, mix the eggs, milk, oil and vanilla and stir until combined.

3) Pour the wet ingredients into the dry and stir until well-mixed.

4) Fill the muffin cups 2/3 full and bake at 375 degrees for 18-20 minutes (until a toothpick comes out clean).

5) Let cool for a few minutes, then transfer to a wire rack to finish cooling completely.

6) To make the frosting whip 6 oz cream cheese with 12 tablespoons of unsalted butter for about 2 minutes, until light and fluffy.  Sprinkle in a pinch of salt, a splash or two of vanilla extract and then 4 cups of powdered sugar and whip until fluffy again.  Pop it into a bag and pipe it onto the cupcakes.
