Strawberry Bread

I had some extra strawberries that I needed to use this weekend and so I made some strawberry bread.  OH MY WORD!!! This was SO SO SO GOOD! I loved it with the glaze, but honestly - it would be great without the glaze as well if you're wanting it a little less "desserty".  I also think that you could EASILY switch the fruit out for blueberries, raspberries, etc. (or a combo) and it would work equally well.  If you make this I'd love to hear what you think!



What You'll Need for the Bread...
- 3/4 cup sugar
- 1/2 cup milk
- 1/2 cup oil
- 1 large egg
- vanilla extract
- 2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups diced strawberries
- 2 tablespoons flour

What You'll Need for the Glaze...
- 2 cups powdered sugar
- 2 tablespoons melted butter
- 1/3 cup finely diced strawberries
- vanilla extract
- milk


What You'll Do...
Step 1) Preheat the oven to 350 degrees, spray a loaf pan with baking spray

Step 2) In a medium bowl, stir together the sugar, milk, oil egg some vanilla (I don't typically measure vanilla).

Step 3) In a separate bowl combine the flour, baking powder and salt.

Step 4) Add the dry ingredients to the wet ingredients and stir until just combined, 

Step 5) Add 2 tablespoons of flour to the 2 cups of diced strawberries and stir to coat.  Fold the strawberries into the batter.

Step 6) Pour the batter into the prepared pan and bake at 350 degrees for about an hour.  A toothpick inserted int the middle should come out clean.

Step 7) When the bread comes out, let it cool for about 10 minutes and then take it out of the pan and let it cool completely on a wire rack.  

Step 8) To make the glaze, stir the powdered sugar, melted butter, diced strawberries and some vanilla extract together.  Add in some milk to smooth it out and get it the consistency that you like.  Pour over the cool bread and ENJOY!
