Tomato Cream Cheese Tortellini

We have a local hole-in-the-wall Italian restaurant that we've been going to for 25+ years (Sicily's in McKinney if you're local) and our VERY favorite dish their is their tortellini siciliano.  It used to not be on the menu, but we had friends that worked there in high school who told us about it and we've been ordering it ever since.  It's essentially a cheese tortellini with a tomato cream sauce and ham (their version also has olives which we omit) and it's just THE BEST!  We had some Costco tortellini the other night and I decided to give it a go and my entire house LOVED it!



I started off with sautéing a couple teaspoons of garlic in some butter for a minute or so...


... and then adding in two 8-oz cans of tomato sauce and a heaping spoon (probably 1/4 cup or so) of tomato paste, a cup of cream and about 1/2 cup of grated parmesan cheese.  I shook in some garlic powder, Italian seasoning, salt, and pepper and let the whole thing simmer while I got the water boiling and cooked the tortellini.


 

I added in some diced ham, mixed in the tortellini and then served it topped with some additional parmesan.



The sauce turned out SO GOOD and this would work for any pasta, not just tortellini.  The costco tortellini comes in a two-pack and I made both and it was saucy but not overly saucy. 


We all gobbled this up and I loved that the sauce was creamy without being overly heavy (as much as you can say that with a cup of cream in there), but you know what I'm saying.
