Pumpkin Chip Cookies

I made these cookies last week and they are SO GOOD!  Pumpkiny and chocolatey and the perfect muffiny but not too muffiny texture ;)

What You'll Need...

- 1 cup unsalted butter, melted and cooled a bit
- 1/2 cup packed brown sugar
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 12 tablespoons pumpkin puree moisture removed (see below)
- 3 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3 teaspoons cinnamon
- 2 teaspoons pumpkin pie spice
- 1 cup semi-sweet chocolate chips

What You'll Do...

Step 1) Put your canned pumpkin into a bowl lined with paper towels.  Blot it to remove most of the moisture.

Step 2) Whisk the melted butter, brown sugar and white sugar together in a medium bowl.    Whisk in the vanilla and pumpkin until smooth.

Step 3) Whisk the flour, salt, baking powder, baking soda, cinnamon and pumpkin pie spice together.  Pour the wet ingredients into the dry ingredients and mix together with a rubber spatula.  Fold in the chocolate chips.

Step 4) Cover the dough and refrigerate to chill for 30 minutes.

Step 5) Remove the dough, preheat the oven to 350 degrees and line two baking sheets with parchment.  Scoop heaping tablespoons of dough and roll into balls and then flatten the tops a bit.  Bake for 11-12 minutes... they're going to look a little soft in the middle but it's fine!

Step 6) Pop a few extra chocolate chips into the tops of your cookies and allow them to cool completely.  In fact... these taste even better the next day!
