Zucchini Bread

 
I tried out a new zucchini bread recipe back in the summer and have been making it pretty much weekly ever since.  It is SO TASTY warmed up with some butter or just plain.  



What You'll Need...
  • 3 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 tablespoon ground cinnamon

  • 3 large eggs

  • 1 cup vegetable oil

  • cups white sugar

  • 3 teaspoons vanilla extract

  • 2 cups grated zucchini

  • 1 cup chopped walnuts (optional)


    1. What You'll Do...

    2. Preheat the oven to 325 degrees F . Grease and flour two 8x4-inch pans.

    3. Sift flour, salt, baking powder, baking soda, and cinnamon together in a large bowl.

    4. Beat eggs, oil, sugar, and vanilla together in a separate large bowl with an electric mixer until combined; add flour mixture and beat well. Stir in zucchini (and walnuts if you're using them) until well combined. Pour batter into the prepared pans.

    5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 to 60 minutes. Cool in the pans on a wire rack for 20 minutes. Run a knife around the edges to loosen. Invert carefully onto a wire rack and let cool completely.

NOTE: My favorite way to make this is to double the recipe, but split it into three pans.  I bake them for an hour and they're PERFECT!


If you don't have  this grater it's a MUST!!!  It makes everything o much easier!

  2. I just made zucchini bread this week! This time I added 1 cup of shredded coconut sometimes I add cinnamon or chocolate chips to mine too. I've also swapped out the walnuts with pecans. I like to add a pinch of nutmeg and some clove to mine too. I think you really just can not go wrong with zucchini bread!

  3. This is the best Zucchini Bread I have ever made! Did the three loaf idea and used avocado oil for a healthy swap. This recipe is a keeper!
