Tomato Cream Sausage Pasta

This recipe came together SO quick and easy and will be a staple in my house this Fall.  I love that I pretty much keep all of these ingredients on hand and that it's creamy without being super heavy.




Here's what you'll need...
- 1 lb Italian sausage
- 1 cup spinach, chopped
- 1 28 can good tomatoes, chopped and drained
- 1/2 onion
- 1.5 cups cream
- 12 oz pasta (mini farfelle is the best!)
- 4 cloves garlic

Here's What You'll Do...
- Remove your sausage from the casings and put in a big pot along with the chopped onion and some garlic.  You don't have to be exact on any of this.  Brown everything on med/low.

- While your meat/onions are browning, boil your pasta and drain.

- Once the sausage is browned add in the drained and chopped tomatoes (my can was already chopped) and the 1.5 cups of cream.  Stir and simmer about 10 minutes and then stir in the chopped spinach and cook for an extra 3 minutes or so and then add in the pasta.

- Stir to coat and then serve with grated parmesan and garlic bread.

  1. I am definitely going to try this. My husband rides a bike and is always looking for a big pasta meal before a big ride. This sounds delicious!!

  3. Do you ever use ground Italian sausage? You wouldn’t have to remove the casings that way. This looks delicious.
