One Pot Creamy Sausage Pasta

 

Y'all know I love a one-pot meal and I mean a TRUE one pot.... not a recipe that calls for cooked pasta because you KNOW that used an extra pot and a strainer ;)  This was a big ol' hit at my house and was so simple and easy but really really flavorful and different than a traditional marinara which was a fun twist.  Did I mention that I love that it's one pot?!?!?!  If you're into one pot meals as much as I am check it out below...




What You'll Need...
- olive oil
- 1 red pepper, chopped
- 1 medium onion, chopped
- 4 cloves minced garlic
- salt and pepper
- 1 lb sausage
- 1/4 cup chicken broth
- 16 oz marinara sauce
- 3/8 cup heavy cream
- 8 oz penne (or other short pasta, farfalle would be great)
- 3 cups water + another littl ebit
- grated parm (1/2 cup or so)
- basil (fresh or dried)

What You'll Do...
Step 1 - Dice your veggies and cook them for 6-8 mins in some olive oil.  Add in the sausage and garlic and cook until crumbly and done.

Step 2 - Pour in the chicken broth, scrape the bottom of your pan to get the good good bits off the bottom

Step 3 - Add in the marinara, 3 cups water, uncooked pasta and a bit of basil.  Get it boiling and then cook it about 15 minutes or until the pasta is done.  You can add in a bit of water as it cooks.  Make sure you stir it a few times to keep the pasta from sticking to the bottom.

Step 4 - Pour in the cream and 1/4 to 1/2 cup parmesan, heat through.  Remove from the heat and let it sit about 5 mins to thicken up a bit.

***NOTES*** 
The flavor on this was SO GOOD!  The original recipe called for fresh basil which would have made it better, but I forgot it so dried worked out just fine for me.  It also called for red pepper flakes which I omitted but would also be phenomenal if your kids like that.  

Next time I make this my plan is to add the whole jar of sauce and entire box of pasta.  I just don't see how it wouldn't be totally fine.  I'll probably add a bit more cream and cheese as well but, again, I don't think it could go wrong.

  2. Yum! Thanks for sharing. This somewhat reminds me of The Buy Guide's sausage pasta, though, theirs is more of a 2 pot and strainer situation. But, I HIGHLY recommend if you haven't tried.
