Pumpkin Cake

It's ALMOST pumpkin season and so I thought it only fitting to try out a new-to-me pumpkin cake recipe ;)  I'm not ready for pumpkins on my porch but I am most definitely ready for some cream cheese icing!





Here's What You'll Need...
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1.5 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 (15 oz) can pumpkin 
- 1 3/4 cup brown sugar
- 1/2 cup plain Greek yogurt
- 1/2 cup vegetable oil (I forgot this for my pic!)
- 4 eggs
- 2 teaspoons vanilla extract

- Two 8 oz blocks of cream cheese
- 1 stick of butter
- 4 cups of powdered sugar
- vanilla extract
- cinnamon


Step 1 - Sift together your flour, baking soda, cinnamon, salt and nutmeg

Step 2 - In another bowl combine your pumpkin, brown sugar, yogurt, vegetable oil, eggs and vanilla extract.

Step 3 - Add your dry ingredients to the wet and mix until combined and smooth

Step 4 - Pour into a prepared (sprayed) 9x13 baking dish and bake at 350 degrees for 35 minutes.

Step 5 - To prepare your cream cheese frosting beat together the cream cheese and butter.  Beat in the powdered sugar, cinnamon and vanilla extract until you get the consistency that you like.  

NOTE: The recipe makes A TON of icing.  I didn't use it all and saved some to dip cookies into (hahaha) but you could EASILY cut the icing recipe in half and be fine.  It really just depends on how much frosting you like.  Also... my 4 cups of powdered sugar is purely a guess.  I started with 2.5 cups as the original recipe called for but it wasn't nearly as sweet as I liked it so I just kept adding sugar.  

Having a helper is HIGHLY encouraged ;)


Especially if they are SUPER skeptical about canned pumpkin ;)



This was when I realized that he probably hadn't sifted the dry ingredients together enough but it didn't affect anything so no harm, no foul.


This was DELISH!!!  It was similar to the pumpkin sheet cake I've been making for years and so the plan is to make that one next weekend and compare ;)

  2. I love the pumpkin sheet cake that you posted a couple of years ago and bake it often in the fall. I can't wait to see how the two compare.
