Today I'm sharing a SUPER simple and really delicious sugar cookie recipe. These aren't super chewy. They're not like a cookie you could do cutouts with. They're kind of light. Kind of shortbready and SO SIMPLE my kids made them.
What You'll Need...
- 3 sticks softened butter (I used salted)
- 1.5 cups sugar (plus extra for rolling)
- 2 large eggs
- 1 tablespoon pure vanilla extract
- 3 cups all-purpose flour
- 1.5 teaspoons baking powder
- 1 teaspoon salt
What You'll Do...
Step 1 - Whisk together the flour, baking powder and salt in a large bowl.
Step 2 - Cream the butter and sugar together in a stand mixer. Beat it on high for 3-5 minutes... it's going to seem like a lot but it will be light and fluffy when it's done. Scrape the bowl, turn the mixer to low and add in the eggs and vanilla.
Step 3 - Add in the flour mixture and bead again for 30 seconds or so.
Step 4 - Roll the dough into 1-inch balls and then roll them in sugar. Place them on a parchment-lined baking sheet and flatten them a bit with the bottom of the glass.
Step 5 - Bake at 350 degrees for 9-10 minutes... you'll want to pull them out as soon as the edges start to get golden brown.
I took one photo while they were making these and it's just the light and fluffy creamed butter/sugar.
This made about 3 dozen cookies and my kids have been gobbling them up all week.
