Ground Beef Potato Bowls

If you have any meat and potato lovers in your house this recipe is for you!  It was quick, easy, hearty and apparently "you couldn't even taste the vegetables" which made it a double win for my kids :) hahaha



Here's What You'll Need...
- 5 large russet potatoes
- Butter or margarine
- milk
- salt/pepper
- onion
- 1 carrot, peeled and chopped
- 1 lb ground beef
- 2 tablespoons Worcestershire sauce
- 1 tablespoon tomato paste
- thyme
- 1/3 cup frozen peas, thawed


Here's What You'll Do...
Step 1 - Prick the potatoes all over with a fork.  Put them on a foil-lined baking sheet and bake them for about an hour and 15 minutes or until they're fork tender

Step 2 - Cut about a 1/4 inch thick slice off the top of each potato.  Scoop the insides out and put them into the bowl of your stand mixer.  Whip them up with more butter than you think you need, a few splashes of milk and some salt and pepper.  We like our potatoes whipped and smooth so just keep adding milk/butter until they're as fluffy and creamy as you like.

Step 3 - Put a tablespoon or so of butter into a large skillet and melt it over medium heat.   Cook the carrots and some chopped onion (I forgot to include that in my ingredient pic - I also didn't measure I just tossed some in there) about 6-7 minutes or until they're softened.  Add the beef and cook, breaking it up as you go, until cooked all the way through.  You can drain it if you'd like but mine didn't have a lot of fat on it so I didn't.  Stir in the Worcestershire, tomato paste, shake on some thyme, 1/2 teaspoon salt and add 1 cup of water.  Bring it to a boil and then reduce heat and cook until the sauce has reduced to your liking.  Stir in the peas and heat through. 

Step 4 - Divide the meat between your hollowed out potato skins, top with the mashed potatoes and pop them back into the oven (400 degrees) for about 20 minutes or until the tops are browned. 








If your family isn't into eating the potato skins you could easily throw the meat mixture into the bottom of a casserole dish, top with the potatoes and then bake and serve like sheperds pie BUT trust me the skins are SO SO SO GOOD!!!
