Happy Thursday, friends! Coming to you with a super simple crockpot recipe PERFECT for busy weeknights.
Here's What You'll Need...
- 1 1/2 lbs chicken breasts
- sea salt (1/2 teaspoon)
- garlic powder (1/4 teaspoon)
- black pepper (1/4 teaspoon)
- 1 1/2 teaspoon dried tarragon
- 1 cup diced white onion
- 2 cups sliced mushrooms
- 1 cup chicken broth
- 8 oz cream cheese (low fat is fine)
- 8 oz spaghetti noodles, cooked according to the package
- 8 oz shredded mozzarella
Step 1 - Add the chicken, sea salt, garlic powder, pepper, tarragon, onions and mushrooms to your crockpot. Pour the chicken broth in. DO NOT ADD THE CREAM CHEESE OR SPAGHETTI!!! Cook on low for 8 hours of high for 4 hours.
Step 2 - Cut the cream cheese into pieces and add it to the sow cooker, cover. In the meantime cook the spaghetti according the package directions.
Step 3 - After the cream cheese has melted a bit, take two forks and shred the chicken. Stir the sauce and chicken together. Add the cooked and drained pasta and stir. Add the mozzarella cheese on top, cover for about 10 minutes or until the cheese is melted.
I'll admit that this doesn't look super appetizing but it was DELISH especially if you love mushrooms. It couldn't be simpler (win!) and made enough for leftovers the next day.

ReplyDeleteI made this tonight in the InstaPot and it was great! I added a bag of frozen peas at the end when adding the cream cheese. Definitely making this again.
