Sheet Pan Pork Loin Dinner

I made  this pork loin recipe for the first time last month and have made it 3 times since.  It was insanely easy, super yummy and did I mention easy ;)

  



Here's What You'll Need...
- Two 1-lb pork tenderloins
- 1/4 cup hoisin sauce
- 1 pound green beans, trimmed
- 1 1/2 pounds baby potatoes, cut in half lengthwise
- 3 tablespoons olive oil
- kosher salt and freshly ground pepper
- 4 tablespoons butter, softened
- 2 tablespoons freshly minced chives
- 1 garlic clove, minced into paste

Here's What You'll Do...
1) Lower your oven rack to the lower middle position and preheat to 450 degrees.  Spray a baking sheet with nonstick cooking spray.

2) In a big bowl, combine the green beans with 1 tablespoon of olive oil, 1/4 teaspoon of kosher salt and 1/4 teaspoon of freshly ground pepper (I don't really measure).   Arrange them in the center of the baking sheet.



3) In the same bowl toss the potatoes with 2 tablespoons of olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper.  Transfer to the baking sheet and arrange them on either side of the green beans, cut side down.



4) Lay the tenderloins (not touching) over the green beans and brush with the hoisin sauce. Sprinkle lightly with salt and pepper and roast for 20-25 minutes or until the thickest part reaches 140 degrees using a meat thermometer.



5) While the tenderloin is roasting, combine the butter, chives, garlic, 1/4 tsp salt and 1/4 tsp pepper and when the tenderloins are done top each one with one tablespoon of the garlic herb butter.  Let the meat rest for a few minutes before slicing.

6) Top the green beans and potatoes with the remaining butter.



This was seriously SO GOOD!!! My kids were all scooping sauce out of the bottom of the pan to put over their potatoes and there was no whining over the green beans which I count as a total win.  My whole family gobbled it up and it was PLENTY of food for all of us.
