Around Christmastime I had a parent give me a bag of homemade granola and, believe it or not, amongst ALL THE TREATS this is the thing my kids kept asking for and they were so bummed when the bag ran out. I sent a desperate email asking for the recipe and have made this several times since. I double the recipe since my kids devour this on yogurt, alone, mixed with some chocolate chips and raisins, etc.
Here's What You'll Need...
- 1 cup old-fashioned oats
- 1 cup sliced almonds
- 1/2 cup coconut flakes
- 1/4 cup wheat germ (I couldn't find this so I use wheat bran)
- 2 tablespoons whole wheat flour
- 1/4 teaspoon cinnamon
- 1/4 cup brown sugar
- 3 tablespoons butter
- 2 tablespoons honey
Here's What You'll Do...
1) Heat the oven to 325 degrees. In a bowl mix together the oats, almonds, coconut, wheat germ, flour and cinnamon.
2) In a small saucepan, combine the brown sugar, butter and honey. Heat until boiling and then cook for about 30 seconds.
3) Pour over the oat mixture and stir to combine
4) Spread on a foil-lined baking sheet and bake for about 20 minutes. Let cool completely and then break into pieces.
**NOTE** I had my oven rack too high and this batch got a little overdone. It was still delicious but just know mine is a little on the dark side.

ReplyDeleteI just made a batch! Switched out flax seed for the wheat germ (GF here) and omitted the flour. . .delicious!! I'm going to substitute half the almonds next batch with pumpkin seeds. . .
ReplyDeleteHere is my new favorite morning snack: apple "nachos" -- thinly slice apples, then melt peanut butter in the microwave, pour over apples and top with granola :). Used your granola for my snack today -- delish!!
