Teriyaki Chicken Thighs

 If you're like me and have a hard time with slow cooker recipes that take 4-5 hours because you're working when it needs to go into the crock pot I've got the perfect recipe for you!  I'd only ever made this on weekends because that's when I was home at 2:00 to put it in the slow cooker but last week I tried it out on high after school and voila! dinner was ready in about 2 hours.  

I know tons of you are about to sing the praises of the Instant Pot but I just can't handle all the buttons and timers and THE STEAM!  



Here's What You'll Need...
- 3 lbs of chicken thighs (skinless if you can find them or just pull the skin off)
- 3/4 cup sugar
-3/4 cup soy sauce (I use reduced sodium)
-1/3 cup apple cider vinegar
- 1 clove of minced garlic
- 3/4 tsp ground ginger
- 1/4 teaspoon pepper
- 4 teaspoons cornstarch
- 4 teaspoons cold water
- cooked rice


Here's What You'll Do...
Place the chicken thighs into your slow cooker.  Mix together the sugar, soy sauce, vinegar, garlic, ginger, and pepper and pour it over the chicken.  Cook on high for 2 hours or low for 4.  Chicken should fall off the bone when it's done.  I turned my chicken pieces over about halfway through cooking.

Pull the chicken off the bone and keep warm.  

Once the liquid is back to boiling, combine the cornstarch and cold water and pour back into the liquid.  Let it cook for a few minutes and thicken.  (you can also pour the liquid into a sauce pan and thicken the sauce on the stove top if that is easier)

Serve the chicken over hot rice and top with extra sauce.





This is a meal that everyone in my family eats and loves!  It's quick and easy and we rarely have leftovers.  If you make it I'd love to hear what you think!
