If a recipe has cream cheese icing I'm going to try it out - I mean how bad can something be if it has CREAM CHEESE ICING?!?! When I saw this recipe I was intrigued because of the sheer amount of apples. I tried it out this weekend and it BLEW US AWAY! Dare I say it's our favorite fall dessert?!?! It was so easy, so moist, so tasty and just all around a great recipe to have on hand this Fall.
What You'll Need...
3 large eggs
2 cups sugar
1 cup vegetable oil
1 teaspoon vanilla extract
2 cups flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
4 cups chopped Granny Smith apples
3/4 cup chopped pecans
1 package (8 oz) cream cheese, softened
2 tablespoons (unsalted) butter, softened
2 cups powdered sugar
Here's What You'll Do...
Step 1 - In a large bowl beat the eggs, sugar, oil and vanilla.
Step 2 - Combine the flour, cinnamon, baking soda and salt and then add to the egg/oil mixture and mix well. Fold in the apples and nuts and pour into a greased 9x13 baking dish.
(Note - the recipe seemed CRAZY at this point and I was a total skeptic. It seemed thick and weird but HAVE NO FEAR!!!)
Step 3 - Bake at 350 degrees for 55 minutes (or until a toothpick inserted comes out clean). Cool.
Step 4 - Beat together the cream cheese and butter. Beat in the powdered sugar and spread over cooled cake.
