Cheesy Chicken and Rice

Hey, friends! I'm always on the lookout for a quick and easy weeknight meal and I LOOOVE rice so I was excited to try out  this recipe.  I changed it up a bit just to simplify things and everyone in my house gobbled it up.  It doesn't look like much but it was SO GOOD!




Here's What You'll Need...
- 4 tablespoons butter
- 1 teaspoon minced garlic
- 1/4 cup flour
- 2 1/4 cups chicken broth
- 2 cups shredded chicken 
- 5 cups cooked rice
- salt and pepper to taste
- 3 cups shredded cheddar cheese


Here's What You'll Do...

Step 1 - Preheat your oven to 350 degrees.  Lightly butter a 9x13 baking dish

Step 2 - Melt your butter in a sauce pan (I used a Dutch oven), stir int he garlic and cook it for about a minute.  Whisk in the flour, salt and pepper and cook for at least a minute.



Step 3 - Slowly stir in the chicken broth, bring it to a boil and let it thicken for a minute or two.

Step 4 - Lower the heat, stir in two cups of cheese and stir until melted.  Add in the rice and chicken, stir to combine and then transfer to the baking dish.  

Step 5 - Bake at 350 degrees for 25 minutes or until the cheese is melted on top.







I'm filing this away for busy school nights - I used leftover rotisserie chicken and on a busy night would for sure use microwavable rice instead of cooking it stovetop.

I'm wondering if you could throw in some shredded carrots, onions, and celery after you've melted the butter, and then add peas or broccoli florets with the chicken and rice before baking to make a complete meal with veggies included? My kids always loved water chestnuts in our chicken casseroles too, to add some crunch!
