Almost One Pot Cheeseburger Pasta

This pasta was a super quick and super yummy weeknight meal that I was able to pull together before running out the door to various activities.  All my kids gobbled it up and there was plenty for lunch thermoses the next day. 




What You'll Need...
- 1 package penne pasta (16 oz)
- 1 pound ground beef
- 1/4 cup butter
- 1/2 cup all-purpose flour
- 2 cups milk (2%)
- 1 1/4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 3 teaspoons ground mustard
- 2 cans diced tomatoes, drained (14.5 oz each)
- green onions, chopped
- 3 cups shredded cheese (Colby-Monterey Jack)
- 2/3 cups grated parmesan cheese



Step 1 - Cook the pasta according to the directions

Step 2 - While the pasta is cooking, brown the ground beef.  Remove from the pan and pour off the drippings.


Step 3 - In the same pan, melt the butter over low heat then stir in the flour until smooth and cook until it's light brown (2-3 minutes).  Gradually whisk in the milk, broth, Worcestershire sauce and dry mustard.  Bring it to a boil (stir constantly!) and cook until it's thickened (just a couple of minutes).  Stir in the tomatoes, return it to a boil, reduce the heat and simmer for about 5 minutes.



Step 4 - Stir in the green onions (I chopped up a few), pasta and ground beef and heat through.  Stir in the shredded cheese and 1/3 of the grated parm and then top with the other 1/3.  Let stand, covered until the cheese is melted.
