I made this on Memorial Day as a side and it was so simple and SO SO SO GOOD!
The dressing is...
- 1/4 cup olive oil
- 2 tablespoons lime juice (you could use the juice of 1 lime... but this is SO GOOD and so much easier)
- 1/4 teaspoon cumin
The salad is...
- sliced cucumber (I used 3 Persian cucumbers)
- grape/cherry tomatoes (I used a little more than half the 16 oz container)
- cilantro (as much as you like)
- 3 avocados
- 1 ear of grilled corn (you could use frozen and add as much as you like)
Step1) Whisk together the olive oil, lime juice and cumin
Step 2) Dice the cucumbers, avocado, tomatoes. Take the corn off the cob and tear off as much cilantro as you like. I LOVE cilantro and so I used a ton and didn't even chop it.
Step 3) Pour the dressing over the ingredients, sprinkle on some salt and pepper and stir. Serve immediately and refrigerate any leftovers with plastic wrap laid directly on top to help keep the avocados green.
Here's the lime juice that I use and LOVE. I use it in Southwest bowls and think it tastes just as good as fresh.
These are my favorite cucumbers.... I find them to be much crunchier than regular cucumbers and they keep better if you have leftovers.
Seriously so easy. Just chop and go!
This was SO SO SO GOOD!!! I served it along with grilled brats and chicken sausages but it would be so good as a side with burgers or grilled chicken as well.

ReplyDeleteThat looks awesome! We do a variation with tomato, sweet onion, and avocado. For a dressing we do red wine vinegar. olive oil, pepper, Seasonall, garlic powder.
