Cadbury Mini Egg Cupcakes

Who doesn't love Cadbury mini eggs and who doesn't love cupcakes?!?!   Why not combine them, right?  I saw  this recipe pinned on pinterest and figured I'd try it out since it's mini egg season :) 




What You'll Need...
- 1 cup unsalted butter, room temperature
- 1.5 cups granulaged sugar
-1.5 cups cake flour (or regular flour and cornstarch... I'll explain in a bit)
- 1.5 cups all-purpose flour
- 1 teaspoon baking soda
- 2 tablespoons baking powder
- 1/2 teaspoon kosher salt
- 4 large eggs room temperature
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 cup crushed Cadbury mini eggs

For the Frosting
- 1 cup unsalted butter, room temp
- 4-6 cups powdered sugar
- 1/4 cup whole milk (ignore the buttermilk in my pic - grabbed the wrong thing)
- 1/2 tablespoon vanilla extract


What You'll Do...

1) Preheat oven to 350 degrees

2) Beat together the butter and sugar until light and fluffy.



3) Whisk together the flours, baking soda, baking powder and salt.  


* I didn't have cake flour, so I used 1.5 cups of regular flour, removed 3 tablespoons of it and then added in 3 tablespoons of corn starch.

4) Add the eggs, one at a time, to the sugar/butter mixture until they're completely incorporated, add in the 1 cup milk and the vanilla and then slowly add in the flour mixture.

5) Add in the crushed cadbury eggs and then fill the cupcake tins (lined with liners).  I spilt it up between 24 cupcakes and they were pretty full.


6) Bake for 20-25 minutes or until a tester comes out clean.  

*I overbaked mine thanks to a home school distraction situation - hence the crispy tops - oops*

7) After they have cooled completely, beat the butter until light and creamy and then add in the powdered sugar, vanilla and milk.  Keep adding milk and/or powdered sugar until your frosting reaches the consistency you like.  I put mine in a gallon ziplock bag, cut the corner off and pipe it on that way - but you could spread it or do whatever you want with it.

  4. Is it 3 cups flour total? Or just 1.5 cake or regular with corn starch? thanks.

    1. So sorry if that was confusing! One and a half regular cups and then one and a half of cake flour. But since I didn’t have cake flour made my own using all purpose flour and corn starch.
