Mexican Style Street Corn

I've made this Mexican-style street corn for a couple of months now and it is hands-down my favorite side dish.  I love it with grilled chicken, as a side dish for tacos or even on it's own with some diced chicken and avocado.  It's SO GOOD!!!  And the best part is that it's super easy.




Here's what you'll need...
- 7 ears of corn
- 2 tablespoons of butter, melted
- 1/3 cup mayo
- 1/2 cup chopped cilantro
- 1/2 cup queso fresco
- cayenne powder
- salt
- garlic powder
- paprika
- lime juice


Here's what you'll do...
Step 1) Remove the husk and silk from the ears of corn.  Cut all of the kernels off the cobs and put them into a mixing bowl.  Pour in the melted butter and then stir until the corn is all coated.  



Step 2) Spread the corn out onto two baking pans and pop them in the oven under the broiler for 5-10 minutes or until it starts to get brown.  YES MA'AM.




Step 3) Put the warm corn back into the mixing bowl and mix in the 1/3 cup mayo, the 1/2 cup chopped cilantro, 1/2 cup queso fresco, cayenne, salt and garlic powder.  Squeeze in the juice from one lime and mix it all together.  Top it with some additional queso fresco, cilantro and sprinkle on some paprika and serve it warm.




This has the cilantro-lime flavor combo that I LOVE and the queso fresco just puts it over the top.  It's seriously so easy and delicious and makes the perfect side dish to so many things.

    1. Sure! I'd probably microwave it like normal and then just toss all the other ingredients with it when it comes out warm

  3. What is queso fresco? I don't think we have that here, what do you think I could use as a substitute?

    1. Hey! You could see if you can find Cotija cheese (a little stronger flavor and harder to crumble) or you could try Feta or even a shredded Mexican cheese blend

    4. Queso fresco is a Mexican style cheese ladies. Being in Cali of course we have plenty, but I honestly don't think Feta will be quite as good because it has a pretty different tang to it. I'd check your market for Queso fresco or Cotija cheese - just in case they do because Mexican food is so popular now and I have friends who live in the south and do have one or both at certain markets. This recipe looks delish and I can't wait to try it! ;)

  4. Looks delicious! I had never heard of queso fresco either so I had to look it up, and read that it was a Mexican cheese. Can't believe that as a cheese lover I had never heard of it. Can't wait to make this!

  5. I'm dumb, but do you cook the corn on the husk before cutting it off into the bowl??? Did I miss that part?

    1. Not dumb!!! You don't cook it first... you cut it off and then bake it :)

  6. My daughter has been begging to make the street corn for a while. This has reminded me that I need to put it in my food planner! Can't wait to eat it.

  7. One of my favorite sides! Sometimes I use the frozen bags of roasted corn from Trader Joe's. Not as good as fresh corn but still very tasty!
