Chicken Alfredo Shells

This recipe was one I put together last week when I had some rotisserie chicken to use but was also craving alfredo sauce (I mean... who DOESN'T crave alfredo sauce?!?!)  The sauce is really the star of the show and this could be adapted depending on what pasta you had on hand and what protein(s) your family loves.




What You'll Need...
- 6 tablespoons of butter
- 3 cloves of minced garlic
- 3/8 cup flour
- 3 3/4 cups milk (I used whole milk)
- 6 oz softened cream cheese
- 3/4 cup grated parmesan
- fresh parsley
- kosher salt
- ground pepper
- 4 cups of shredded rotisserie chicken
- package of jumbo pasta shells


Step One: Cook the pasta shells according to the package directions.  Next, melt the butter over med/low head, add in the garlic and let it simmer for a minute or so.  Add in the flour, stir until smooth and allow to cook for a minute.  Pour in the milk, whisk it constantly and bring it to a simmer.  Stir in the cream cheese and Parmesan cheese and stir it until everything is melted and the sauce is thick (just a couple of minutes).  Season it with salt and pepper and toss in some parsley (you can even squeeze in some fresh lemon juice if you feel so inclined).





Step Two - Put a layer of sauce in the bottom of a 9x13 casserole dish.  Then take the shells and put in some sauce and some shredded chicken (you could also mix the chicken and sauce if you wanted to... I had helpers and so one was scooping sauce and the other was putting the chicken in).



My helpers were eating shells dipped in sauce as they filled them ;)


Step Three - Cover the stuffed shells with a layer of sauce and sprinkle on a little bit of cheese... I had shredded romano that needed to get used so I put that on top and then bake at 350 degrees for about 20 minutes or until everything is warmed through.


This sauce is something EXTRA GOOD (thanks, cream cheese) and is really the star of the show.  I think that you could so easily to this sauce with some angel hair pasta topped with dice ham and peas or some penne pasta and chopped broccoli.  So easy to make and adapt to your preferences!

  1. Is it really 3/8 cup of flour? Never have seen that measurement before. Do you mean 3/4 cup?

  3. How do you stay so slim eating rich yummy food like this!? Your recipes always look so good but I feel like I could never eat them very often. As an aside....I absolutely love your blog. You make me want to move to Texas and become a math teacher!

    1. First of all - I'm definitely not posting any bathing suit pics and could FOR SURE stand to lose some pounds so keep that in mind :) All that to say, I try to practice/preach portion control while still enjoying the foods that I love... so I'll have a couple of these shells with a salad instead of the 8 that I could eat ;) If I want a cookie I have one, not three. I feel like life is WAY TOO SHORT to not enjoy - so I try to do that in moderation. Hope that helps!
