PB Cup Cupcakes

Dave's birthday was while the boys were at camp and so we decided to celebrate him properly this past weekend with cupcakes, presents and the birthday song :)  Dave is a peanut butter lover and I decided to try  this cupcake recipe and it was a HIT!!! 




Here's What You'll Need...
- 1 box chocolate cake mix
- 1 cup milk
- 1/4 cup vegetable oil
- 4 eggs
- 2 tablespoons Greek yogurt

- 1 stick of butter (1/2 cup)
- 1 1/2 cups creamy peanut butter
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 3 tablespoons milk
- mini peanut butter cups


Here's What You'll Do...
Step 1 - Mix together the cake mix, milk, oil, eggs and 2 heaping tablespoons of Greek yogurt.  While your helper puts everything in the mixing bowl you can line your cupcake pans with liners.  I love  these liners because they're "neutral" and they never ever ever stick.




Step 2 - Once everything is mixed together, fill your cupcake liners about 1/2 - 3/4 full and then drop an UNWRAPPED peanut butter cup into the center.


I used these dark chocolate peanut butter cups because they are AMAZING but any mini pb cups would do.



Step 3 - Bake at 350 degrees for about 18-20 minutes or until they're done and then let the cupcakes cool completely. 


Step 4 - As the cupcakes are cooling you can make the frosting.  Beat together the peanut butter and butter until they're smooth and combined.  Beat in the powdered sugar, vanilla and 3 tablespoons of milk until it's light and fluffy.  If you need it to be fluffier, add in more milk a teeny bit at a time.  If you want it to be thicker, add in powdered sugar.  


I put a gallon ziplock inside a glass container and then fill it with the frosting, snip off the corner and use that to pipe the icing onto the cupcakes.  You can top them with a few more chopped pieces of peanut butter cups and call it a day!






These were SO SO SO GOOD!!!  The icing tastes JUST like the inside of a peanut butter cup and the peanut butter cup baked inside is delightful!

  1. These sound amazing. Why do you put the peanut butter cups into the cupcakes unwrapped? Seems like you'll have to eat around the peanut butter cup and then remove it to peel the paper off?

  3. Directions say to add the peanut butter and butter to make the frosting, but I don’t see butter on the ingredient list... how much butter did you use?
