Chicken Parm Sliders

Monday was rainy and drizzly and pretty much my FAVORITE kind of day at home.  It was the perfect night for an easy, extra cheesy diner and so I put together some chicken parmesan sliders and my kids FLIPPED for them.  So much so that I'm making them again tonight :)

I saw the original recipe  HERE (one of the BEST places for recipes - everything is amazing) and then kind of made it work for us.

This is NOT a pretty picture - but it was storming, there was no natural light and we pretty much devoured them before I could snap anything pretty :)

Here's What You'l Need...
- Provolone slices
- Mozzarella slices
- grated parmesan
- marinara sauce
- Hawaiian rolls
- butter (1/2 stick)
- 1/2 tsp garlic powder
- red pepper flakes (optional)
- frozen chicken strips (about 24 oz)

Here's What You'll Do...

Step One - Bake your chicken as directed on the package.
Slice the rolls horizontally without separating them, place them in a greased baking dish (I use Pam spray) and then top them with provolone slices.  Pop that in a 375 degree oven for about 5 minutes or until the cheese is starting to melt.

Step Two - Put some sauce on top of the melty cheese, then layer with the prepared chicken, more sauce and then the mozzarella slices.

Step Three - Melt 1/2 stick of butter and mix in 1/2 teaspoon of garlic powder.  Brush that on top of the rolls and then sprinkle on as much grated parmesan as you like. I sprinkled a few red pepper flakes ONLY on the ones for me and Dave - you could leave them off entirely or top the entire pan with them depending on how much kick you want.

Step Four - Tent some foil over the top and pop them in the oven for 10 minutes.  Remove the foil and let them continue to bake for another 10 minutes or until they're warmed through, melty and your desired toastiness on top.

Y'all.  These were SO GOOD!!! They would make the PERFECT football or party food and they came together in no time at all.  A couple of notes... I was worried about the chicken being dry because it was essentially being baked twice but it wasn't dry at all.  The original recipe called for an entire jar of sauce and I cut that down to about half and then used the extra for dipping and it also called for a whole stick of butter, but 1/2 was MORE than enough to top the rolls.  If you had time to hand bread and bake your own chicken tenders I bet these would be even tastier  but for a quick weeknight meal the bagged kind were perfect.

All three of my kids DEVOURED these and I had enough leftover cheese and sauce to easily plan a second pan of them for later in the week.  Such an easy and hearty meal.

If you try these out I'd love to know that you think!   Happy Thursday, friends!!!

  1. Looks so good! Your recipes are my favorite to follow because I usually have most of the items on hand already (and you use simple ingredients) but the biggest reason is-- my kids will actually eat it! Thanks for sharing!
