Million Dollar Dip

I had this dip at a school party one time and couldn't get enough.  I was SHOCKED at how simple the recipe was and thought I'd share it so you could file it away for the time that you need to bring an appetizer to a party last minute.

All you need is...
- 1.5 cups mayonnaise
- 1 cup shredded cheddar
- 1/2 cup real bacon bits (it was one package for me)
- 1/2 cup slivered almonds
- 5 or 6 green onions

Directions
1) Mix it all together.  Chill for a couple of hours.  Serve with crackers.  The end.

Y'all.  It's going to seem weird.  And you're going to think I'm crazy.  And nobody is going to want to try it when they know it's mayonnaise covered nuts - so just don't tell them and wait until they've scarfed down half your dip and THEN tell them that the "crunch" is actually almonds :)

This recipe is super flexible... I thought it was a little too "mayonnaisey" at first so I threw in some more cheese and almonds.  I really don't think you can mess it up.  It's ALMOST like a pimento cheese but way better (because I think pimento cheese is gross).

I served mine with Ritz crackers and it was a HIT!  I'd love to know what your go-to last-minute appetizers are - leave me a comment and let me know!

Happy Thursday, friends!

PS - New Matilda Jane comes out today and it's the cutest EVER!  Look at the swim line!!!

  2. Last minute (unhealthy) appetizer: sausage dip + crackers. Cook 1 lb sausage (drain grease) and combine with a block of melted cream cheese and 1 can Rotel original.

    1. This is my go to! But because I'm lazy I use a package of the pre-cooked turkey sausage crumbles. Sometimes Mild Rotel (less spicy if there are littles eating it) and throw it all in a little crock pot. (And we use Tortilla chips for dipping, didn't think about crackers- will have to try that too) THE BEST!

  4. Cheeseball...8oz block of cream cheese (softened), 3-4 green onions, one jar of dried beef (chopped finely), 1 tablespoon of Worchestshire sauce, 1 tablespoon of Accent. Mix all together and let chill for a few hours...serve with club crackers or ritz or ruffles. Delicious!

  5. This is my hands-down, all time favorite dip to bring to parties and such! I substitute the grilled corn for canned, and the roma tomato for cherry, and it turns out beautifully. Plus the lettuce on top totally constitutes it as a salad, am I right? :)

  6. I am not a mayo fan at all, but I have been making this dip as one of our New Years Eve dips for about 5 years and love it. I always throw in a little extra cheese. I think everyone likes it, since the bowl is always empty at the end of the night!

  7. I may have to try it. This is my go to dip for parties. I made this for my kid's birthday party this past weekend and I've sent the recipe link to so many mamas. It's called Charleston Cheese Dip. It's soooo good. I make it the night before a lot of times and bake it right before I serve it.

  8. Taco dip... one package of softened cream cheese, mix with one package of taco season, spread on plate, top with black beans, salsa, cheese, lettuce or whatever else you like on your tacos.

  11. I can't stand mayo, but I typically like mayo based sauces, so I bet this would be good! I would probably have to have somebody else make it for me, though, so I didn't gag at mixing in the mayo. Yuck.

  12. I'm with you on most of your recipes, but this one is a hard NO from me. I can't do mayo based stuff AT ALL. I'm sure lots of people will love it though!

    1. Hi Melanie,
Have you ever tried Hellman's Vegan Mayo? I don't do dairy AT ALL, so this mayo is a lifesaver!!

  13. Next time you make this, try topping it with the sweet and spicy pepper jelly from Trader Joe's (in the aisle next to the jellies and nut butters) - game changer!
