Chicken Noodle Soup

Today I'm sharing a recipe that I pretty much "winged" as I went that ended up working out and I've dubbed it "Cheater Chicken and Noodle Soup!" because it's quick and easy and still full of flavor and the comfort of chicken noodle soup :)

When I think of visiting my Oma and Opa (my mom's parents) I can almost taste her homemade chicken noodle soup.  Without fail, we would pull into their driveway, walk inside and she'd have the table set and the soup simmering.  Afternoons and evenings spent sitting at her table with her crocheted table cloth and little sandwiches catching up over a bowl of hot soup are some of my fondest memories. 

Dave was feeling a little under the weather last week so I decided to try my hand at chicken noodle soup.  I was in a bit of a time crunch so I didn't have time to make my own broth, but nobody seemed to mind and this came together easily and ended up being super flavorful.




Here's what I used...
- 1 whole rotisserie chicken
- onion
- carrots
- celery
- egg noodles
- parsley
- 8 cups chicken broth 



Step 1 - Chop the veggies.  I used 2 stalks of celery, about 3 carrots and half an onion.


Step 2 - I poured some oil in a butch oven and sauted the veggies for a few minutes until they had softened.  I threw in a little bit of minced garlic as well.







Step 3 - I added in the broth and about 2 additional cups of water (so 10 cups total) along with a few bay leaves.  I heated it to boiling and then tossed in the egg noodles and cooked it about 8 mins (however long the egg noodle package indicated)







Step 4 - I took the meat off of the bones of the chicken and dumped it all into the soup.  I tossed in some fresh, flat parsley, stirred it all together and let it simmer until we were ready for lunch.






I served it with a warm baguette and everyone ate it up!



This made a TON of soup so I ended up freezing several containers of it and put it away for a night when we need a quick dinner and next time I won't add quite so many noodles.  I ended up having to add a little more broth/water to it the next day after the noodles absorbed some of the broth overnight.




If you're looking for a quick, hearty and LARGE meal this is the one for you.  You probably noticed that it wasn't quite as detailed or "exact" as some of my other recipes and I think that's just kind of the nature of chicken noodle soup.  Make it as "brothy" as you like with as many (or few) veggies as you like with just the amount of chicken that you like.  Next time I make this I'm going to attempt to make my own broth with the chicken carcass (I hate that word!) but I need to get a mesh sieve and use alphabet or star noodles for the kids ;) 


I'm hoping that over the years I'll perfect my own chicken noodle soup recipe and that it will conjure up fond memories for my kids as they grow up.

  2. Isn't it fun how food can conjure so many memories? My mom's chicken noodle soup is the best and I always crave it when I need some good old comfort food. I just made some this weekend, too! This recipe sounds super handy when you are in a bit of a time crunch. Love the idea of alphabet noodles for kids!

  4. Yum! I love homemade soup! I like to sprinkle a pinch of dill into mine before eating , totally steps it up a notch
    Also, you can totally use leftover thanksgiving turkey in place of the chicken and that tastes AMAZING

  6. I love "cheat" recipes. I did something similar this weekend when making chili. I didn't have a few of the things I needed so I got creative. Those recipes are always a bit more fun (well, when it works out at least)!

  7. I love chicken noodle soup! I also make it very similar to this way, and sometimes I turn it into a chicken rice soup and that's delicious as well.

  11. We use Kluski noodles instead of egg noodles and my kids adore them. They are a little denser so don't soak up the broth as much.

  12. Close to my mom's and my recipe. We add peeled cut up potatoes. Thinking I may need some this weekend. I'll have some time to cook over my fall break.

  13. Love Chicken Noodle Soup. Try to keep some in the freezer at all times. I use this Paula Deen recipe as my guide. I only add back in the chicken. Leave out the sherry, parmesan cheese and mushrooms.

  18. I make an almost identical soup with more spices and less noodles, and it's perfect for taking to sick friends! I buy Costco's big bag of fresh rotisserie chicken that has already been pulled so it's ready to throw in! Less work for me!
