Monster Cookies

I blogged about Monster cookies years ago, but it was buried in the bottom of a reeeeeeally long post with no pictures and I get asked about them often so when my kids requested them this week I figured I'd snap a few pictures along the way and make it an official recipe post so it could be easily found from now on.



These cookies are my family's FAVORITE because they're loaded with so many yummy things.
Peanut butter - check.
Raisins - check.
M & Ms - check.
Oatmeal - check. 

None of my kids are in a peanut free class and so I can send these with lunches and for snacks and they're one of the best road trip snacks ever.  If you're in the market for a great cookie here you go!

INGREDIENTS
- 3 eggs
- 1 1/4 cup packed brown sugar
- 1 cup granulated sugar
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- 1 12 oz jar of creamy PB (that's a cup and a half if you have a big jar in your pantry like me)
- 1 stick of softened butter (I use margarine)
- 1/2 cup M&Ms
- 1/2 cup chocolate chips
- 1/4 cup or so of raisins
- 2 tsp baking soda
- 4 1/2 cups quick cooking oatmeal (not instant)


STEP ONE
Preheat oven to 350 degrees

In a large bowl, combine the eggs and sugars.  Mix well. (I don't use my stand mixer... just a wooden spoon).  


STEP TWO
Add the salt, vanilla, peanut butter and butter.  Mix well.  




STEP THREE
Stir in the M&Ms, chocolate chips, raisins, baking soda and oatmeal.  Drop by tablespoons onto cookie sheets. (You can press a few extra M&Ms onto the tops if you want them to look extra colorful and delicious!)











I get about 5 dozen cookies out of this recipe and will freeeze them in quart-sized ziplock bags by the dozen.  I can pull one out, pop it in a lunch box and it's ready by lunchtime.

Directions

5) Bake for about 8-10 mins. I usually do 9 and they seem "gooey" when they come out, but they're PERFECT once they cool.

6) Leave them on the cookie sheets for a few minutes and then move them to a cooling rack

  8. I think I just found this year's cookie exchange recipe. I'll use red and green m&ms and I will only have to double the recipe to get enough for all the girls. We do a dozen for everybody. And I'll have to try them this weekend since college boy is coming home. That way I can be sure they are good enough to share..LOL...or keep for hubster and me! Thanks for the yummy recipe!

  12. I have a very similar recipe for Monster Bars. Those are great when you don't want to mess with cookies. My son's friends request them!

  14. Oh my word, these are THE BOMB!! I took them in to work on Monday when all of us nurses were facing the possibility of spending at least 24 hours at the hospital because of Hurricane Irma and I figured we needed some good treats to cheer us up. Well, they lasted just a few hours, hahaha. I am sharing the recipe with everyone! (The only thing I noticed was my 16 ounce jar of peanut butter equaled a cup and a half.)
