We hosted family at our house for burgers a couple of weeks ago and I found myself on a hunt for a new side dish to go along with the burgers and corn. This recipe caught my attention and it was a total hit! I did adjust the proportions a bit to make it work, but the end result was delicious!
Here's what I used to make a batch that fed 6 adults with enough for leftovers....
What You'll Need...
- 3 lbs baby red potatoes, halved (or quartered if they're large)
- 9 (or so) slices of bacon, cooked and crumbled
- 16 oz sour cream
- Juice of 2 lemons
- 1/2 package of ranch dressing mix
- salt (I used pink, but Kosher would be great as well)
- 1 cup shredded cheddar
- 1/2 cup chives
What You'll Do...
Step 1 - Wash then chop the potatoes. Boil them until they're fork tender (mine took a little over 15 minutes) and then drain and rinse them under cold water.
Step 2 - While the potatoes are cooking get the juice of 2 lemons and whip that together with the sour cream and 1/2 packet of ranch (my picture shows more lemons and sour cream than you'll need... I'll explain in a second!)
I wasn't sure I was going to like the lemon - but it was SO GOOD!!!
Step 3 - Toss your potatoes in with the prepared sour cream sauce and then top with the crumbled bacon, chives, cheese and season with salt. Cover and refrigerate for at least an hour.
Okay - so using the original proportions of the recipe this is what my salad looked like after stirring in the sour cream - there was a RIDICULOUS amount of "sauce". I ended up fishing out the potatoes and putting them in a separate bowl and then adding the toppings. My pics show more sour cream and such but I've adjusted the measurements in my version of the recipe to create a less "soupy" salad :)
As far as the toppings go, you could easily adjust to your liking. If you LOVE bacon put in extra, trying to cut back... cut the cheese. Love chives? Toss in a few more.
This was a big hit with my family and would be a a great side dish for your Fourth of July BBQ! ENJOY!!!
Is the recipe you posted above your version with the adjusted amounts or the original recipe and we need to adjust the amounts to not have the "soupy"version? :)

DeleteI actually ended up making this recipe for the 4th of July. I wanted to make it a bit healthier and used greek yogurt instead of the sour cream. It came out delicious, everyone was raving about how good it was.
