Shepherd's Pie

Today I'm sharing one of Dave's favorite recipes EVER.  He's a TOTAL meat and potatoes kind of guy and this is all of his favorite things in one.  


INGREDIENTS
- 1 pound ground beef
- 1 cup chopped onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 1/2 cups corn
- 2 cloves garlic
- 8 oz beef broth
- 2 tablespoons butter
- 2 tablespoons flour
- 2 pounds potatoes
- milk, butter, salt and pepper for mashed potatoes

Step 1 - Chop up your carrots, celery and onion until you have 1 cup of each



 Step 2 - Brown and drain the beef.
Add onion, celery, carrots, garlic and salt.
Lower and cook 10 minutes.



Step 3 - Meanwhile, chop up 2 pounds of potatoes and throw them in a pot of boiling water.  Cook for about 10 minutes or until they're "mashable" with a fork.





Step 4 - Cook one bag of frozen corn in the microwave.


 Step 5 - After 10 minutes, add the 8 oz beef broth to the ground beef mixture and bring it to a boil.




Step 6 - Melt 2 tbsp butter and combine it with 2 tbsp flour.  Mix the two together until it's smooth and then add enough to the beef mixture to make a thick gravy to bind the filling.   (I usually just add it all in)




 Step 7 - Pour the mixture into a baking dish, top with corn and let cool.


 Step 8 - While everything is cooling off, drain the potatoes and mash them.  I feel like everyone has their own way of making mashed potatoes, but in case you don't have a way here's how I do mine. 

I put the HOT, cooked potatoes into the bowl of my stand mixer.  I throw in a few tablespoons of butter or margarine, a few splashes of milk (we use skim), some salt and pepper and then I whip them on high.


I'll add more butter/milk until they're really fluffy and yum. 


Step 9 - Top the beef and corn mixture with the hot mashed potatoes and then brush the top with a little more melted butter.


Step 10 - Bake the whole thing (uncovered) at 325 degrees for 35 - 40 minutes or until the potato peaks start to turn all golden brown.

  1. This looks delicious!! For some reason, mashed potatoes intimidate me. I don't know what it is but I get nervous and they never turn out yummy. I think I always skimp on the butter and that just doesn't work. :)

  6. That is one of my favourite meals! I even double up on the veggies just to sneak them in for my kids.

    Technically, though, the one with ground beef is cottage pie. Shepherds pie is the one with lamb (shepherd + lamb) and it's even more delish!

  9. I think Shepherd's Pie is one of those recipes that everyone makes a different way... and every version is so yummy!! I live in New England and our traditional just seems to be ground beef (I mix with tomato soup to make a 'gravy'), corn, and then mashed potatoes... I add cheese to the top of mine too! Yum!!

  11. We absolutely love shepherd's pie in our house! Mine is almost identical to this, only I just use a bag of frozen mixed veggies instead of cutting it all up. lol! I need to try making it with fresh ingrediants. Thanks for sharing :)

  17. Try picking up some bags of frozen mirepoix mix next time you're at Kroger (chopped celery, carrot, and onion.) It's such a timesaver for recipes like this - less chopping!
