Before I share my recipe for the month I have to take a minute to give y'all the biggest shout out ever!
Yesterday's post elicited WAAAAAAAY more of a response than I had ever anticipated or intended.... by at least tenfold. hahaha
When I wrote the post I really wanted to get the point across that despite a little bit of crazy, there are some amazing people to meet and connections to be made through blogging. I have no intentions of hanging up my blogger hat or letting the negative comments get the best of me - and y'alls sweet comments and emails completely affirmed everything I said in that post.
In regards to the negative comments - here are my thoughts..... I totally appreciate constructive criticism. If I have a typo, grammatical error, etc. I can understand someone letting me know. If you have a differing opinion or experience - I completely welcome those comments. For the most part I publish and appreciate what people have to say. What I have a hard time understanding are people leaving what can be perceived as "ugly" comments anonymously - if you feel strongly enough to comment, by all means do so. But I think that you need to sign in and leave your comment with your name on it. There's nothing that I say or do on the internet that I wouldn't put MY NAME on. If I feel passionately about a post somewhere, I'll respond - with my name and email address because I'm not popping in just to put someone down, but to open a dialogue about what I'm feeling and I don't think you can do that by hiding behind anonymity.
I'm not naive enough to think that everyone is going to love everything I say or do - that would be boring! I don't love every single thing that every single blogger who I read has to say. But I do think that people say things anonymously that they would NEVER say in person. EVER.
Last - I'm not going to say that negative comments/feedback isn't hurtful - because it does sting a bit. My mom has often said said that there's always some truth to perception, and I've taken several commenters perceptions to heart - good and not so good. BUT at the end of the day I know that what I'm putting out there is a only snippet of my life. As honest, open and transparent as I attempt to be - the ONLY person who knows me completely and the only opinion matters at the end of the day is my heavenly Father and THANK GOODNESS he's a God of grace, not perfection.
So.... on to recipes!!!
When Fall arrives I ALWAYS think of zucchini bread. When we lived in London (Ontario, not England) the neighbors behind us used to grow huge zucchinis and my mom would make bread with them all the time! I know that the zucchini in there is minimal when compared to the sugar, but it's better than no zucchini, right??? :)
Here's what you'll need...
First off, I grate two cups of zucchini. For me, that's typically two of the regular size zucchinis from the grocery store.
After I grate the zucchini I combine the eggs, applesauce and sugar in a big mixing bowl.
... butter and flour two loaf pans...
.... and pour it in!
Bake at 350 for 1 hour and you're good to go!
Usually, as soon as it comes out of the oven I run a knife around the outside edge and pop the loaves out and then let them cool on a rack. I love this in the mornings with a cup of tea or as an afternoon snack at school. My kids think it's great and it reminds me of fall in Canada :)

ReplyDeleteZucchini bread is my favvvv, along with pumpkin bread. We had a ton of zucchini in our garden this year!! I always add a handful of mini chocolate chips to my quick breads!! Yummy! ReplyDeleteThis bread sounds so good! I have seen all kinds of zucchini breads, muffins, etc. on pinterest and have been nervous to try it. A friend made me chocolate zucchini muffins last week though, and they were amazing! I may have to try this soon!

ReplyDeleteI didn't know you lived in Canada! I live in New Brunswick and just grew some very large zucchini's in my yard. Fall in Dallas must be very different from Canada! Thanks for the recipe to try with my zucchini!!

So far, I have made your enchiladas and chicken spaghetti. My husband is a very picky eater and they were both big hits with him and my entire family. Love your blog! Seeing pics of her in those cute little pants always puts a smile on my face. Seriously, ALWAYS. Also, you have beautiful hair. I was complaining to my hairdresser about all of the gray I am getting in my hair. She told me to just be thankful I have hair. So many people would LOVE to have your beautiful, long hair.
