BEST Pulled Pork EVER

So I'm in a fabulous girls accountability group and last Fall I made my pulled pork for them when it was my night to host.  I served it on sliders alongside Shay's moms corn salad and was asked to please make this every time I hosted from now on.  I typically make this about once a month and even served leftovers of it to Sheaffer during a play date :)

It's super delicious and crazy easy.  Here's all you need...
- 1 Pork Shoulder Roast (sometimes called a butt roast. I have no clue why).  Bone in or boneless, either way is fine.  This one had a bone.
- 1 BIG bottle of Sweet Baby Rays original BBQ sauce.  You could use another kind, but why on earth would you... this one is PERFECT
- 1 large onion
- 2 cans (or just pour some in from a big bottle) of full sugar soda.  I've used Coke and Dr. Pepper (NO DIET SODA ALLOWED!!!)

Step 1) Peel and quarter the onion
Step 2) Put the meat in the crockpot (I don't spray mine with PAM or anything), throw the onion on top, pour in the Dr. Pepper.  Turn your crock pot on high.

My crockpot got turned on around 8 am and I let it cook on high until about 5:30... when you touch the meat with two forks it should be falling apart (this was after I kind of poked at it a bit).

Once the meat is tender, scoop out all the onions and fatty pieces.

I scoop out all the meat into one bowl and train the liquid into another.

I put the meat back into the crockpot, add in the entire bottle of BBQ sauce and start mixing/shredding/stirring. The meat kind of magically starts shredding up and mind ends up looking like this:

Dave ate his last night as a sandwich with chips on the side, I ate mind plain with veggies.

I leave for work at 7:00 a.m. and don't typically get home until after 4:00, so my favorite kind of meal is one that's cooked while I was gone.  It's delicious, simple and makes A TON.  Pretty sure I'm going to be bringing this to my Sunday School classes "Harvest Party" this year :)

And because it just wouldn't be a post by me without a Griffin pic... here she is yesterday. She's excited about it being October :)
