I love a great pasta salad in the summer... something that I can prep on the weekend and eat for a quick lunch by the pool or for dinner as a side with something off the grill. I came across this recipe back in the Fall and last week was the perfect time to try it out.
Here's What You'll Need...
1 (20 ounce) package refrigerated cheese tortellini
1 1/2 cups grape tomatoes, cut in half
1 large cucumber, chopped
1/2 red onion, chopped
3/4 cup crumbled feta cheese
(the original recipe called for olives as well, but I left those out since they're not my favorite).

For the Dressing:
1/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 clove garlic, minced
1/2 teaspoon dried oregano
Salt and pepper, to taste

- Step One -
Bring a large pot of salted water to a boil. Cook the tortellini according to the package directions and then drain and rinse them with cold water.
I grabbed these tortellini from our local Kroger store and they were SO GOOD!!! I hadn't tried them before, but will definitely use them again.
- Step Two -
Slice the tomatoes in half, dice the cucumber and chop the onion.
Little helper eyes are optional ;)
- Step Three -
Whisk together the olive oil, vinegar, garlic, oregano, salt and pepper together in a bowl.
- Step Four -
Toss the vegetables and Feta cheese with the cooked tortellini.
- Step Five -
Pour the dressing over the salad and mix it together until it's all coated.

I had mine with a grilled chicken breast and it was amazing. And then I had it the next day for lunch. And dinner again that night. ;)

ReplyDeleteThat sounds delicious! Summer pasta salads are my love language. And to be honest, I eat them year round :) My favorite pasta salad calls for a dressing of1 1/2 cups oil mixed with 1 1/2 cups vinegar, 1 cup sugar, 1 tsp garlic powder, 1 T onion flakes, 1 T parsley flakes, 1 T dill weed ,1 tsp salt, 1 tsp pepper, and a sprinkle of Italian seasoning: that makes the dressing. Cook up a box of rotini ( or really any pasta) Stir rotini with dressing and any veggies you like-- I tend to use tomatoes, olives, crocodilians, zucchini carrots, celery and cauliflower. I also like to add strips of provolone and hard salami. When I serve it sometimes I add a sprinkle of Parmesan cheese. Super good! And it makes a ginormous batch so I tend to use it for a week's worth of lunches :) Liz @ familyoffoley.wordpress.com

I usually roast the caramelized pecans in the oven for a few minutes to add extra crunch.
Yummy! I think I'll add some shredded rotisserie chicken and call it dinner!

ReplyDeleteWe have cilantro in our garden and nothing beats fresh cilantro.
I dice 3-4 heirloom tomatoes, 1 ripe mango, 1/4 red onion with chopped cilantro, lime juice, salt and a seeded jalapeno for spice. Sometimes I will throw a diced avocado in there if I'm feeling fancy. Then I use blue corn tortilla chips for dipping. Other times I use a white peach instead of a mango.
