Overnight Breakfast Casserole

 

This breakfast casserole has become my family's favorite and I love it because you can mix and match your meat and cheese, add veggies, AND prep it the night before you want to bake it.

I didn't take a pic after it was baked before I served it but here is what was left after I served it to our group of counselors on Saturday morning ;) 



What You'll Need...
- 1 loaf Challah bread
- 1 lb sausage
- 2 cups shredded cheese
- salt, pepper, dry mustard
- 8 eggs
- 2 cups milk

What You'll Do...
- Slice the bread into small-ish pieces
- brown and drain your sausage
- Mix the bread, cooked sausage, and cheese together
- Lightly beat the eggs and add in some salt, pepper and a sprinkle or so of dry mustard.  Mix in the milk.
- Pour the wet mixture over the bread/cheese/sausage and toss everything to coat
- Pour into a greased 9x13 pan, cover and refrigerate overnight
- Pull the casserole out of the fridge while your oven preheats to 350.
- Bake at 350 for 45 minutes.







I forgot to take a picture of it after baking but TRUST ME it's golden and cheesy and delicious. 

You could easily do ham instead of sausage. Or add in some bacon. Or toss in some sliced mushrooms or diced peppers. Honestly, you could probably even use a different kind of bread, but the challah is THE BEST! If you make this I'd love to hear what you think!
