I've been having a love affair with all things Brussel sprouts lately which is ironic given my childhood vow to never eat them EVER :) When I saw this recipe I knew I had to try it and it lived up to my expectations. I'm always a sucker for bacon and apples in salad and LOVE honey mustard as well.
Here's What You'l Need...
- 1 lb Brussels sprouts, trimmed and then chopped/shredded
- 2 medium granny smith apples, chopped
- 1 medium red onion, diced
- 1/2 sweet orange pepper, diced
- 1/2 cup chopped walnuts
- 1/2 cup shredded cheddar cheese
- 1/2 cup green grapes, halved
- 4 strips bacon, cooked and chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons honey mustard
- 1 clove minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Here's What You'll Do...
Mix together the spouts, apples, onion, pepper, walnuts, cheese, grapes and bacon in a large bowl. In a separate bowl, whisk together the oil, vinegar, honey mustard, garlic, salt and pepper. Pour over the salad and toss to coat.
This was simple and fresh and SO TASTY! I did end up cracking a bit more pepper onto mine and it was just as delish the next day for lunch.
This would be a great option for a side dish if you're grilling or needing to bring a salad to a potluck or luncheon and are looking for something a little different.
