Apple Butter Breakfast Bake

As my kids get older our weekend breakfasts are getting more hearty which I absolutely love.  I'm all about a casserole that I can prep the night before and pop into the oven on Saturday morning and most of the time they're asking for a second helping for lunch.  When I saw  this recipe that called for apple butter I was intrigued because I love that cheddar/apple combo and this was a HUGE hit at my house.  




Here's what you'll need...
- 10 biscuits (leftover from dinner the night before or freshly made)
- 3/4 cup apple butter (or other jelly)
- 2 cups sharp cheddar cheese, shredded
- 1.5 cups cubed fully cooked ham
- parsley
- 6 large eggs
- 2.5 cups milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon ground mustard

 
Here's What You'll Do...

Step 1 - Slice your biscuits in half, spread as much or as little apple butter (or jelly) inside them, replace the tops and cut them into halves or quarters.  Arrange the cut biscuits in a single layer in a greased 9x13 baking dish.  Top with the shredded cheddar, ham and sprinkle on some parsley.



Step 2 - Whisk together the eggs, milk, salt, pepper and mustard.  Pour over the biscuit/cheese/ham and then cover and refrigerate overnight.






Step 3 - The next morning, remove the casserole from the refrigerator and let it stand on the counter while the oven preheats to 325 degrees.  Bake, uncovered, for 50-60 minutes until the edges are golden brown and the center is puffed.  Let it stand for about 10 minutes before cutting into it.



I kind of freaked out when I cut into the pan because it looked a little too "wet" for my liking... I am NOT all about a "wet" (read: underbaked) breakfast casserole but it actually wasn't gooey at all.  I absolutely loved it with the apple butter but I think next time I'm going to try it with strawberry jam inside the biscuits.  My FAVORITE sandwich ever is a ham and cheddar melt from SNUG downtown and it has strawberry jelly on it and it's AMAZING!  You could even do half of the pan with apple butter and half with strawberry OR if the jelly aspect freaks you out you can omit it altogether.  


My family gobbled this up and I'm excited to have this recipe in my back pocket for mornings when I need something hot and hearty.

  1. How long do you bake it for? You said until edges are brown and center is puffed, just wondering about how long that takes. I have tried a number of your recipes and ALL have been a hit!! Many of them are now staples, have you considered a cookbook????

      It's 50-60 minutes and I updated it in the post as well - thanks so much for catching that! And no because I don't actually create any recipes... I just enjoy sharing the ones that work for our family. But that's the sweetest compliment and I'm so glad that you've enjoyed the ones I've shared!
