Chili for Hot Dogs

My kids BEGGED me to make my chili last weekend for the Cowboys game on Sunday nigh tbut I put my foot down because it's just too dang hot for chili.  I said what I said. 



That said, I'm not a total monster so we compromised and I made chili for hot dogs instead. I understand that people have super strong opinions about chili and beans and all of that and my regular chili recipe is definitely bean heavy so I LOVE this one because it's PERFECTION for hot dogs and couldn't be easier. I was a little oooged out by not pre-cooking the ground beef but cooking it this way makes it SO FLAVORFUL and tender. Literal perfection.

What You'll Need...

1 small onion, diced
3 tablespoons olive oil
2 cloves garlic, minced
1 6-oz can tomato paste
2 cups water
1 tablespoon chili powder
1 tablespoon cumin
2 teaspoons salt
2 teaspoons pepper
1 teaspoon garlic powder
⅛ teaspoon cayenne pepper
1 lb lean ground beef


What You'l Do..

Step One - Saute the onions in oil (just enough to cook them in) over medium heat in a saucepan for 5 mins or until golde

Step Two - Add garlic and continue cooking for 2 more minutes

Step Three - Add the tomato paste then stir and cook for 2-3 mins or until the paste just starts to brown on the bottom of the pan.

Step Four - Add water then stir well to deglaze the pan. Add chili powder and remaining spices then whisk until smooth (chili powder, cumin, salt, pepper, garlic powder, cayenne)

Step Five - Add the ground beef then stir the meat into the liquid with a whisk or form. Once the meat and sauce are uniformly combined, bring to a low boil. 

Step Six - Cover and simmer for 30 minutes over low heat, stirring occasionally. 

Step Seven - Remove lid then continue simmering, uncovered, for 30 additional minutes or until the chili has reached desired thickness. 

Step Eight - Cover and keep warm until ready to serve.
