Salsa Verde Crockpot Chicken

It's already 95+ degrees here in TExas which means the LAST thing I want to do is turn on my oven and bake something for dinner. OR use my stove. It's just too dang hot. The crockpot is my bestie in the summer because it helps keep the temps down in our house AND I'm not spending a bunch of time cooking dinner ;) THE BEST!  

I started making this salsa verde chicken a couple of summers ago and it never disappoints. I actually threw it in the crockpot on Saturday with completely frozen chicken breasts and it turned out perfectly be dinnertime.  Use it to make quesadillas, top nachos, build tacos, or use in a rice bowl. 




Here's what you'll need...
- 4 chicken breasts (I used two of these packs from Costco)
- 1 jar salsa verde (about a cup and a half)
- 1/2 cup honey
- about 6 tablespoons of lime juice
- chili powder (just 
- garlic powder
- onion powder
- paprika
- cumin
- salt and pepper
(I didn't really measure the spices... I just kind of sprinkled som eon there)

Here's What You'll Do...
Dump everything in the crock pot and cook on low for about 7 hours, shred the chicken and cook for about 45 more minutes. I've even used completely frozen chicken breasts and just turned it up to high until it was done (about 4 hours). 




I loved this because everyone was able to use the chicken in a way that they liked.  It was really one prep for me but different meals based on preference.  It would even be good served as the protein in nachos.
