Hamburger Stroganoff

Y'all know I'm always on the hunt for a delicious one pot meal and this one is a new family favorite at our house! The original recipe came from one of those FB recipe sites but I doubled and tweaked it a bit to fit my family's tastes and I have a feeling this one will be on repeat for a good long while!

What You'll Need...
- 2 lb ground beef
- 1 yellow onion
- 4 cloves garlic, finely chopped
- kosher salt
- pepper
- 5 cups beef broth
- 2 cups half and half
- 3 tablespoons corn starch
- 4 teaspoons dried parsley
- 4 teaspoons Worcestershire sauce
- 1 lb medium egg noodles
- 2/3 cups sour cream
- 1 cup freshly grated parmesan cheese
- chopped fresh parsley

What You'll Do
- Add a little bit of oil to your pan and start cooking down your onion. You can absolutely do this along with your ground beef unless your kids are like mine and are weird about crunchy onion in which case I'd cook them a little bit ahead of the meat ;) Add in the ground beef, break it up, and cook. Add in the garlic for the last couple minutes of cook time.  Drain.

- While your meat is browning, whisk together the beef broth, half-and-half, a couple pinches of salt and pepper, the cornstarch, dried parsley, and Worcestershire sauce in a large measuring cup.

- Once the beef, onions and garlic are cooked, add the broth mixture and stir to combine. Immediately add the egg noodles to the pot and stir, making sure that the noodles are as covered as possible. Bring the mixture to a boil over high heat and then reduce the heat to low, cover and cook about 7 - 9 minutes or until the noodles are tender and the sauce has thickened.

- Remove from the heat and stir in the sour cream and Parmesan.  Garnish with fresh parsley and serve hot.

This was giving Swedish meatballs and it was SO SIMPLE and hearty. It was creamy and made a lot and everyone loved it.  It makes A LOT so make sure you use a big pan - this one is my absolute favorite of all time.

If you make this I'd love to hear what you think!
