Creepy eyeball pasta ;)

If you're looking for a super simple, delicious and GROSS Halloween-week recipe I'm your girl :)  I modified one of my kids FAVORITE recipes ever and an instant favorite was born!



Here's What You'll Need...
- 2 lbs ground beef
- 1 cup Italian bread crumbs
- 1/2 cup grated Parmesan
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 4 eggs
- 1 lb pasta
- sliced olives
- string cheese
- 1 jar marinara

Keep in mind this is enough for a double batch of meatballs - my kids devour them and they make great leftovers.  Cut everything in half if you're not feeding a crowd!


Here's What You'll Do...

Step 1 - Combine the meat, eggs, bread crumbs, grated parmesan, garlic powder, onion powder, salt and pepper in a large bowl.  Mix until combined.  I use my hands.  
Is it my favorite thing? No.  Does anything else work better?  Also no.



Step 2 - Form the meatballs... it's a generous 1/8th cup portion for each one.  Roll them compactly and place them on a baking sheet lined with aluminum foil and then sprayed with cooking spray.  Make a small hole in the center using your finger and then insert 1/4 of a string cheese into each meatball.




Step 3 - Bake at 350 degrees for 20 minutes and then top with an olive.  I put my olives on first and some slid off while baking so next time I'll add them at the end.


Step 4 - Prepare your pasta as indicated on the package and combine with your sauce.  Top with the eyeballs and serve.





We all gobbled this up (some of us picked off the olives) :) and leftovers were requested for lunch which always indicates a winning recipe.    These are the same meatballs (minus the string cheese and olives) that we simmer in sauce and use on meatball subs and you can find that info on  THIS POST.
